But the winter season in particular – especially the Christmas season – offers countless places to enjoy. These range from brightly lit Christmas markets to cozy cafés, but baking together at home in the warmth is simply a must.December will be here before you know it. So before you venture into the big Christmas menu, why not try out this special recipe ? We’ll show you how to bake an apple strudel. And not the classic Austrian way, but a sophisticated reinterpretation with an Italian twist – created by renowned chef Claudio Sadler.
List of ingredients: What you need for 8 portions

For the dough
- 4 ½ ounces flour
- ¼ cup water
- ½ ounce melted butter
- 1 whole egg
- ½ teaspoon salt
For the filling
- 1 ½ pounds golden apples (washed and cleaned)
- 2 ½ ounces sugar
- 2 ounces butter
- Zest of 2 oranges
- 1 ounce rum
- 1 ounce toasted pine nuts
- 2 ounces raisins
- ½ teaspoon cinnamon powder

For the batter:
Place water, flour, melted butter, a pinch of salt and the egg in a bowl and knead everything together well. The dough should be nice and soft. If it is too firm, simply add a little more water. Then leave it to rest in a warm place for about 30 minutes.
For the filling:
Cut the apples into thin slices. Then marinate them for 20-30 minutes with orange peel, raisins, pine nuts, rum, cinnamon and sugar. This slightly softens the apples and allows the flavors to soak in.
Now it’s the dough’s turn again. Roll it out very thinly and brush it generously with melted butter. This makes it supple and ensures the typical crispy layer later on, after which the apple filling is spread evenly on top. Using a damp kitchen towel, carefully roll up the strudel, seal the ends well and then leave to rest in the fridge for 30 minutes to firm up.
Off to the oven:
Before baking the apple strudel, brush it again with melted butter. Then put it in the oven at 175 °C (350 °F) for around 25-30 minutes. During baking, you can brush it once or twice with butter to give it a golden brown color.
And that’s it!
Leave the apple strudel to cool slightly. For a special flavor, finish it off with powdered sugar, finely grated orange zest and a pinch of cinnamon. Your juicy strudel is ready: crispy on the outside, fruity and fragrant on the inside!
